Punch: rum & cider


Simple syrup –
1/3 cup sugar
1/3 cup water
8 sprigs thyme, rosemary, or lavendar

2 cups apple cider
1 1/2 cups rum
3/4 cup fresh lime juice
Club soda to top
1 tsp Angostura bitters

Can make syrup ahead of time
Mix sugar and 1/3 cup water (1:1 ratio) to boil
Remove from heat and add thyme, cover
Soak for 10 min then strain

In a pitcher mix simple syrup, cider, rum, lime juice, and bitters
Pour over ice, top with club soda

8 servings
